| Spanish Roja |

The prototypical Rocambole, with its rich, sweet , complex, full-bodied character. It is a well-known heirloom. Good enough to eat raw! Starts with some heat when eaten raw, but it fades. Pleasant aftertaste and aroma. When roasted, Spanish Roja is mild and sweet with little aroma. Purple-streaked wrappers and 7 or 8 easily peeled, light to dark brown cloves per bulb with gorgeous flavor make this one a favorite for garlic connoisseurs!SOLD OUT |

This cultivar actually comes from Belarus, but carries the name “Leningrad” in North America. Late maturing, very hardy, tall dark green plants. Large bulbs with 4 to 6 cloves. The bulb and clove size is large and it’s a really good looking garlic. The flavor is great too, it’s described as hot and pungent with a lasting bite. Also known as Shvelisi. From the village of Shvelisi in the southern Republic of Georgia. This hardneck variety is especially good for baking, as it holds its shape, keeps its flavor and develops a delightful aroma. Each large bulb has a beautiful purple-striped wrapper and contains 9-10 easy-to-peel cloves per bulb.SOLD OUT |
| Persian Star |

Originally from a Samarkand, Uzbekistan, bazaar in the late 1980′s. This one has some vivid clove colors. The outer bulb wrapper is sometimes smooth white but the inner wrappers are purple streaked. It has red-tipped cloves with marbled streaks on a whitish or yellow-brown back ground. Eaten raw, it has a very pleasant flavor with a mild spicy zing. It holds up well to cooking and maintains it’s texture and flavor. Averages 7 cloves per bulb.SOLD OUT |

Also known as “Polish White.” Bulbs with purple-blushed skin. A great garlic for braiding. Plants are larger and hardier than most softneck varieties; cloves are large too, with 8-12 cloves per bulb. Excellent strong flavour: hot, but not too hot.SOLD OUT |

It is a large bulbed vigorous strain with several layers of cloves. In a 1990 taste test at Rodale kitchens this was a top rated softneck. It has a mild but lingering flavor with a tingle. It has four or five layers of cloves with 8 to 20 total cloves possible per bulb.SOLD OUT |
